Baked Redfish with Vegetables

Ingredients
- 250 g carrots
- 2 red onions
- 1 Zucchini
- 1 red bell pepper
- 1 yellow bell pepper
- 2 Garlic cloves
- 600 g redfish fillets (4 fillets)
- 4 tbsp sprouting oil
- 1 tbsp lime juice
- 0.5 tsp garam masala
- 1 tsp turmeric
- 1 tsp curry powder
- Salt
- Pepper
- 2 stalks coriander
- parchment paper
Instructions

Peel carrots and onions, wash zucchini and bell peppers. Slice all into fine strips. Peel garlic and crush.

Rinse fish fillets under cold water and pat dry. Mix oil with lime juice and spices, season with salt and pepper.

Cut four large pieces of parchment paper and lay them on the work surface. Toss vegetables with garlic, spread on the paper, and place one fish fillet in the center of each piece.

Brush fillets with spiced oil. Seal the parchment into packets, place on a baking tray, and bake in preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 20–25 minutes.

Meanwhile wash coriander, shake dry, and pluck leaves. Open packets to serve and garnish with coriander.
