Ingredients
- 1 Vanilla bean
- 250 g buttermilk quark
- 3 tbsp maple syrup
- 1 large organic orange (or 2 small)
- 2 Eggs
- 225 ml milk (1.5% fat)
- a pinch salt
- 8 slices whole‑grain toast
- 2 tbsp Rapeseed oil
Instructions
-
1.
Split the vanilla bean lengthwise and scrape out the seeds with a knife.
-
2.
Whisk the quark with maple syrup and vanilla seeds until smooth.
-
3.
Rinse the orange hot, dry it, grate the zest finely and stir into the quark.
-
4.
Peel the orange so that all white pith is removed. Cut fruit fillets between the membranes, place in a small bowl and set aside.
-
5.
Beat eggs, milk and salt in a shallow baking dish. Dip each slice of bread into the mixture, turning to coat.
-
6.
Heat a large non‑stick pan with ½ tbsp oil. Fry two slices for 1–2 minutes on each side until golden brown. Repeat until all oil is used and all toast pieces are cooked. Serve with quark and orange fillets.
