Grilled Roast Chicken with Sweet Potatoes

Ingredients
- 1 roast chicken (1.2 kg)
- Salt
- Pepper (freshly ground)
- 2 cloves garlic
- 1 tsp chopped rosemary
- 1 tsp chopped thyme
- 1 tsp orange zest
- 2 tbsp honey
- 4 tbsp plant oil
- 500 g Sweet potatoes
- 1 tbsp lemon zest
- 4 sprigs Parsley

Preheat the oven to 180°C (356°F) with upper/lower heat. Wash the roast chicken, pat dry and season inside and out with salt and pepper.

Peel the garlic cloves, finely dice them and mix with the chopped herbs, orange zest, and honey.

Place the roast chicken in a roasting pan, brush with 2 tbsp oil and half of the honey, then bake for 25-30 minutes. Flip the chicken, brush again, and bake for another 30 minutes.

Meanwhile, wash the sweet potatoes and boil them in salted water for 20-25 minutes until tender. Drain, peel, and slice into 0.5 cm thick rounds. Heat the remaining oil in a grill pan and grill the potato slices 2-3 minutes on each side.

Divide the finished roast chicken, arrange it with the grilled sweet potato slices on warmed plates, and garnish with orange zest and parsley leaves before serving.
