Ingredients

  • 4 medium potatoes
  • Salt
  • 2 Spring Onions
  • 100 g corn (canned)
  • 1 Garlic clove
  • 150 g crème fraîche
  • 60 g grated Emmental cheese
  • 60 g grated cheddar cheese
  • 75 g diced bacon
  • 1 tbsp dry white wine
  • pepper (ground)
  • Sea salt

Instructions

  1. 1.

Preheat the oven to 180°C (356°F) with upper and lower heat.

  2. 2.

Wash the potatoes thoroughly and boil them in salted water for 15-20 minutes. Trim the spring onions and cut into diagonal rings. Drain the corn.

  3. 3.

Peel the garlic clove and mash it into the crème fraîche. Stir in both cheeses, bacon, corn, spring onions (reserve 1‑2 tbsp for garnish), and white wine. Season the cheese mixture with salt and pepper.

  4. 4.

Remove the potatoes from the pot, halve them lengthwise, and spread the cheese mixture over each half. Place on a greased baking sheet and bake on the top rack for about 10 minutes until the cheese melts.

  5. 5.

Take out and sprinkle with sea salt and remaining spring onions before serving.
