Baked Polenta

Ingredients
- 200 g cornmeal
- 3 eggs
- 3 onions
- 3 tbsp freshly grated Parmesan
- 500 ml meat broth
- 0.5 tsp dried marjoram
- 1 tbsp butter
- 1 tbsp Olive Oil
- Salt
- Pepper (freshly ground)
- nutmeg
Instructions

Heat a little olive oil in a pot, toast the cornmeal, then pour in the broth, bring to a boil, season with salt and simmer covered over low heat for about 25 minutes. Remove, let cool. The polenta should be fairly firm.

Peel the onions and cut into thin strips.

Roast the onion strips in a pan with oil until golden yellow. Season with salt, pepper and dried marjoram.

Whisk the eggs in a bowl until frothy.

Mix the cooled polenta with the frothy beaten eggs and parmesan, season with pepper and nutmeg, then spread 1 cm thick onto a baking tin lined with parchment paper. Distribute the onions on top and cover with another 1 cm layer of polenta.

Bake in a preheated oven at 200°C for about 20 minutes. Sprinkle with grated parmesan and broil until golden yellow. Serve with fried meat or a spinach sauce.
