Baked Pineapple in Chinese Style

- 2 tbsp coconut flakes
- powdered sugar (for dusting)
- 1 ripe pineapple
- 3 eggs
- 150 g flour
- 75 ml dry white wine
- 3 tbsp vegetable oil
- 1 tbsp coconut syrup
- 0.5 vanilla bean (pulp)
- 1 tsp grated lemon zest
- a pinch of salt
- 2 tbsp sugar
Instructions

Separate the eggs. Whisk the flour with 100 ml water, the white wine, the oil, the coconut syrup, the yolk, the vanilla pulp and the lemon zest. Beat the egg whites with salt and 2 tbsp sugar until stiff peaks form and fold into the batter. Trim the stem and crown of the pineapple. Stand the fruit upright and peel it from top to bottom with a knife 1 cm thick. Remove black spots with a knife. Use a pineapple corer to remove the hard core. Slice the fruit into finger‑thick rings. Heat oil in a deep fryer.

Pass the pineapple rings through the batter and fry portions until golden brown.

Remove and drain on kitchen paper. Sprinkle pineapple slices with powdered sugar and coconut flakes and serve immediately.
