Baked Pasta with Tomatoes and Salmon

Gratinated pasta with tomatoes and salmon from Spoonsparrow is always a hit.
Ingredients
- 3 tomatoes
- 300 g salmon fillet (skinless)
- 150 g mozzarella
- 2 tbsp finely sliced basil
- 400 g penne
- Salt
- pepper (ground)
- 2 tbsp olive oil
- 100 g crème fraîche

Preheat the oven to 200°C.

Wash, clean, quarter, seed and dice the tomatoes.

Wash and pat dry the salmon fillet. Remove any bones if needed and cut into cubes. Dice the mozzarella. Cook the penne in plenty of boiling salted water until al dente, then drain and let cool slightly before placing in a bowl. Mix the salmon and mozzarella cubes with olive oil, tomato cubes and basil, then combine with the hot pasta. Season everything with salt and pepper.

Transfer the mixture to a greased baking dish, spread crème fraîche over the top, and bake in the preheated oven for about 5 minutes until bubbling.
