Herb Tofu with Tomatoes

The vegan herb tofu with tomatoes from Spoonsparrow works perfectly as a healthy meal‑prep dish!

Ingredients

  • 600 g tofu
  • 1 stalk basil
  • 3 tbsp olive oil
  • 400 g cherry tomatoes
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper

Instructions

    Cube the tofu. Wash the basil, shake dry, pluck leaves and finely chop.

  2. 2.

    Mix basil and 2 tbsp oil with the tofu and let it marinate covered in the refrigerator for about 30 minutes.

  3. 3.

    Meanwhile wash the tomatoes and halve them.

  4. 4.

    Heat the remaining oil in a pan and sauté the tomatoes. Deglaze with lemon juice and simmer over low heat for 2–3 minutes.

    Pan‑fry the tofu in another pan for 3–4 minutes until golden brown. Add basil oil and tofu to the tomatoes, season with salt and pepper.
