Baked Oysters

Ingredients

  • 1 Shallot
  • 100 g crème fraîche
  • 1 egg yolk
  • 2 Tbsp grated Parmesan
  • 2 tbsp dry white wine
  • Sea salt
  • Pepper (freshly ground)
  • 12 oysters
  • 1 tsp Pink peppercorns
  • 2 tbsp freshly chopped parsley

Instructions

    Peel the shallot and finely chop it. Mix with crème fraîche, egg yolk, parmesan, and white wine; season with sea salt and pepper.

    Preheat the oven to grill mode.

    Open the oysters, clean them, and place on a baking sheet (optionally on a bed of sea salt for better grip). Spread the cream mixture over each oyster, sprinkle pink peppercorns, and bake 5-6 minutes until gratinated.

    Serve the baked oysters sprinkled with parsley.
