Baked Oatmeal with Apple and Carrot by Spoonsparrow – a vitamin-rich breakfast that not only tastes great but is also ideal for on-the-go!

Ingredients

  • 180 g fine rolled oats
  • 35 g almonds
  • 1 tsp Baking powder
  • 1 tsp cinnamon
  • 1 pinch Cardamom
  • 0.5 tsp Salt
  • 475 ml milk
  • 50 ml maple syrup
  • 1 egg
  • 3 tbsp butter
  • 1 grated apple
  • 1 grated carrot

Instructions

    Preheat the oven to 180 °C (fan‑forced 160 °C; gas: level 2–3) and grease a baking dish with a little butter if needed. In a bowl, mix the oats with half of the almonds, baking powder, cardamom, cinnamon, and salt.

    Melt the butter in the microwave. In another bowl whisk together the maple syrup, milk, egg, half of the melted butter, and vanilla extract using a whisk.

    Wash, dry, and grate the apple and carrot. Fold them into the oat mixture, spread it in the dish, and pour the milk mixture over it.

    Coarsely chop the remaining almonds and scatter them on top. Sweeten with a drizzle of maple syrup if desired. Place the Baked Oatmeal in the oven and bake for 35–45 minutes.
