Ingredients

  • 800 g lamb meat (from the leg)
  • 2 Garlic cloves
  • 400 g waxy potatoes
  • 200 g cocktail tomatoes
  • 400 g beans
  • 8 small onions
  • 1 red bell pepper
  • 40 g black olives (pitted to taste)
  • 4 tbsp freshly chopped herbs (e.g. rosemary, thyme)
  • Sea salt
  • 2 tbsp lemon juice
  • ground pepper
  • 80 g sheep cheese (e.g. Kefalotyri)
  • 60 ml olive oil

Instructions

    Preheat the oven to 160°C fan.

    Wash the meat, pat dry and cut into cubes. Peel the garlic cloves and slice them. Peel and cube the potatoes. Wash and halve the tomatoes. Wash and trim the beans. Peel the onions. Wash, halve, trim and dice the bell pepper. Mix the meat with all vegetables, olives and herbs; season generously with salt, lemon juice and pepper. Spread on the center of four double parchment squares or circles. Top with sliced cheese, drizzle olive oil, fold edges over filling and seal tightly. Tie together in a small bundle if desired.

    Bake in the oven for about 1.5 hours. Open before serving and add a light pinch of pepper again.
