Ingredients

  • 4 Crottin de Chavignol
  • 2 thin zucchini
  • 6 sprigs Thyme
  • 2 tbsp clarified butter
  • sea salt (with herbs de Provence)
  • white pepper
  • olives (for garnish)
  • wooden skewer (to secure)

Instructions

    Drain the Crottins well. Wash the zucchini and cut them lengthwise into thin slices, blanch briefly and drain well. Wash the herbs and shake dry. Wrap the zucchini strips around the Crottins and insert thyme.

    Brown in hot clarified butter until golden brown all around. Season with salt and pepper, arrange on plates and serve with olives.
