Ingredients

  • 2 stalks chicory (16-20 leaves)
  • 1 bunch chives
  • 200 g shrimp (glass)
  • dill
  • 150 g yogurt
  • 50 g sour cream
  • 1 tbsp ketchup
  • Salt
  • pepper (from the mill)
  • 2 tbsp lemon juice

Instructions

    Clean the chicory, cut out the bitter core in a cone shape. Trim remaining leaves to about 6 cm length.

    Blanch chives for 15 seconds in boiling water, drain and shock. Let shrimp drain in a sieve. Place each chicory leaf with shrimp and tie with chive strips into packets along the length.

    Whisk yogurt, sour cream and ketchup together, season with salt, pepper and lemon juice, taste.

    Wash dill and finely chop without large stems. Mix with cocktail sauce. Arrange chicory packets on a plate and serve the sauce for dipping.
