Ingredients

  • 4 small round fresh goat cheeses (40 g each)
  • 12 sprigs thyme
  • 1 tbsp Olive Oil
  • coarse ground pepper from grinder
  • 2 slices toast bread
  • 4 tbsp olive oil
  • 125 g frisée salad
  • 125 g endive salad
  • 120 g cherry tomatoes
  • 3 tbsp red wine vinegar
  • Salt
  • Pepper
  • grainy Dijon mustard

Instructions

    Place goat cheeses on a baking sheet lined with parchment paper. Rinse thyme, shake dry and sprinkle over the cheeses. Drizzle with olive oil and season with coarse pepper.

    Cube toast bread into small pieces. Heat 2 tbsp olive oil and roast the bread cubes until golden brown. Transfer to paper towels.

    Toss salad leaves, wash, trim, and spin dry. Rinse tomatoes and halve them. Mix vinegar with remaining olive oil, salt, pepper, and mustard.

    Bake goat cheeses under preheated grill until light brown. Arrange salad and tomatoes on a plate. Place goat cheese on top. Drizzle salad with the dressing and sprinkle croutons over it.
