The Green Salad with Peach, Goat Cheese and Walnut Vinaigrette by Spoonsparrow is the perfect low carb dinner and also vegetarian!

Ingredients

  • 200 g leafy salad (e.g., young sorrel, beetroot leaves, arugula)
  • 4 peaches
  • 400 g goat soft cheese (4 pieces of about 100 g each)
  • 1 Garlic clove
  • 40 g chopped walnuts
  • 3 tbsp Rapeseed oil
  • 2 tbsp walnut oil
  • 2 tbsp lemon juice
  • 1 tsp Honey
  • Salt
  • Cayenne pepper

Instructions

    Wash, trim and dry the leafy salad, then tear into bite‑sized pieces if desired. Wash the peaches, halve them, pit and cut into wedges. Arrange both on plates and place a goat cheese piece in the center of each.

    Peel and finely chop the garlic for the dressing. Mix with walnuts, oils, lemon juice and honey, seasoning with salt and cayenne pepper. Drizzle over the salads and serve.
