Baked Fish Fillet with Mushrooms

Ingredients
- 4 fish fillets (about 200 g each, e.g., cod)
- Salt
- Pepper
- 2 sprigs dill
- 3 sprigs oregano
- 200 g mushrooms
- 2 Tomatoes
- 8 teaspoons olive oil

Rinse the fish fillets under cold water, pat dry and season with salt and pepper. Wash the dill and oregano, shake off excess moisture, pluck the leaves and chop them.

Clean the mushrooms and slice them thinly. Wash the tomatoes, halve them, remove the seeds and dice into small cubes.

Lay four large pieces of aluminum foil on the work surface and brush each center with 1 teaspoon of oil. Place the fish fillets on top, scatter the sliced mushrooms, diced tomatoes, oregano and a bit of dill over them, drizzle with 1 teaspoon olive oil, and season again with salt and pepper. Carefully seal the foil into packets. Put the packets on the oven rack and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 15–20 minutes.
