Ingredients

  • Butter (1 tsp per ramekin)
  • Breadcrumbs (1 tsp per ramekin)
  • 6 Eggs
  • 125 ml milk
  • nutmeg
  • 100 g Emmental cheese
  • Salt
  • Pepper (freshly ground)

Instructions

    Butter fire‑proof ramekins and dust with breadcrumbs.

    Whisk 2 eggs with milk, salt, pepper, nutmeg and grated cheese; pour into ramekins, crack one egg into each and lightly season. Place ramekins in a shallow wide pot of hot water, bring to boil and cover; simmer for about 10 minutes until set.

    Serve from the ramekins (e.g., with herb sauce or parsley potatoes and salad).
