Ingredients

  • 130 g flour
  • 2 tbsp sugar
  • 1 packet vanilla sugar
  • a pinch salt
  • 6 Eggs
  • 250 ml milk
  • 2 tbsp raisins
  • 20 ml rum
  • butter for baking
  • 1 tbsp powdered sugar for dusting

Instructions

    Separate the eggs. Whisk together flour, salt, powdered sugar, sugar and yolks, then let rest for 30 minutes. Soak raisins in rum. Beat egg whites until stiff.

    Whisk the batter again, fold in the beaten egg whites. In a large oven‑proof skillet, pour a thick pancake in hot butter, flip and finish cooking.

    Tear the cooked batter into small pieces, add rum-soaked raisins, dust with powdered sugar and caramelize in the hot oven.

    Dust the Kaiserschmarrn with powdered sugar before serving.
