Baked Dorade in Potato Skin

Ingredients

  • 1 dorade (ca. 700 g, ready to cook)
  • 200 g potatoes
  • Salt
  • Pepper
  • 50 g butter
  • 2 tbsp plant oil
  • 1 sprig thyme
  • thyme leaves (for sprinkling)

Instructions

    Preheat the oven to 200°C. Wash, peel and cut the potatoes into very thin slices or shave them. Blanch in boiling salted water for 3 minutes, drain and let cool.

    Rinse the fish and pat dry. Stuff the cavity with a sprig of thyme and season generously with salt and pepper; sprinkle with thyme leaves and cover the fish with the potato slices like scales. Melt some butter and brush the potato skins with it. Grease an ovenproof dish with butter, place the fish inside and bake for about 30 minutes until the potato skins are golden brown; if desired, brown further for 5 minutes on high heat at the end.
