Oven-Baked Dorade

Ingredients
- 4 pre-cooked dorades (serving size)
- 400 g cocktail tomatoes
- 1 Garlic clove
- olive oil
- 1 untreated lemon
- 100 g black olives
- Salt
- pepper (from grinder)
- 5 sprigs rosemary
- 12 stems thyme
- basil for garnish

Preheat the oven to 200°C.

Wash the fish inside and out thoroughly, pat dry with kitchen paper. Score each fillet on both sides three times with a knife. Remove stems from tomatoes. Peel and finely chop garlic. Grate lemon zest into a small bowl. Add garlic and 5-6 tbsp olive oil. Pick off one sprig rosemary and four thyme stems, finely chop and add to the oil.

Oil a fireproof baking dish. Spread tomatoes with garlic and olives. Season fish inside and out with salt and pepper. Slice grated lemon thinly and stuff into the fish. Add remaining herbs, then place dorades on top of tomatoes. Brush half of the herb-olive mixture over them and bake in the oven for 25‑30 minutes until golden brown. Flip once during baking and brush the other side with oil.

Serve the fish together with tomatoes and olives on plates, garnished with basil.
