Baked Corn Patties

Ingredients

  • 150 g flour
  • 250 ml milk
  • 2 Eggs
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp chives
  • 1 can corn (285 g drained weight)
  • 30 g clarified butter
  • 4 tomatoes
  • 150 g mozzarella

Instructions

    Whisk together flour, milk, eggs, a pinch of salt and pepper; let the batter rest for about 20 minutes.

    Fold in drained corn and 1 tbsp chives. In hot clarified butter, fry portions of the batter into approximately 16 small patties. Keep warm in a 70°C oven.

    Wash tomatoes and slice them thinly. Drain mozzarella and cut into thin slices.

    Place finished patties on a greased baking tray; preheat the oven to 220°C. Arrange tomato slices over the patties, sprinkle with salt and pepper, and top with mozzarella. Bake until the cheese melts. Serve with a fresh salad.
