Ingredients

  • 4 cod fillets (about 160 g each)
  • 80 g breadcrumbs
  • 2 tbsp freshly chopped herbs (basil and thyme)
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp flour
  • 2 Eggs
  • olive oil (for frying)
  • 2 bell peppers (red and yellow)
  • 2 red onions
  • 400 g cherry tomatoes
  • 2 Garlic cloves
  • 3 tbsp olive oil
  • basil (for garnish)

    Wash and pat the cod fillets dry. Mix breadcrumbs with herbs and place on a shallow plate. Season the cod with salt and pepper, then dust in flour. Dip in beaten eggs and coat with the herb breadcrumb mixture. Fry each side for 2-3 minutes until golden brown in hot oil.

    For the vegetables, wash and halve the bell peppers, peel and cut onions into wedges, and halve the tomatoes. Peel and finely chop garlic. Sauté peppers and onions in hot oil for 3-4 minutes. Add tomatoes, season with salt and pepper, and cook for 2-3 minutes until softened. Plate the cod fillets and garnish with basil before serving.
