Ingredients

  • 4 cod fillets (200 g each)
  • 1 tsp lemon juice
  • Salt
  • Pepper
  • 3 tbsp Flour
  • 2 bunches spring onions
  • 100 g butter
  • 80 g grated Parmesan cheese
  • 450 g small waxy potatoes
  • Salt
  • ground pepper

Instructions

    Wash the fish, pat dry, season with salt and pepper, drizzle with lemon juice, then coat in flour. Peel the potatoes and boil them in salted water for 25 minutes. Trim the spring onions; cut off ends. Finely chop one bunch, coarsely chop the other.

    Heat 2 tbsp butter in a pan and sear the fish fillets on both sides for 6 minutes, then remove and keep warm. Add the remaining butter to the pan and sauté the chopped spring onions, then mix in cheese, salt, and pepper.

    Place the fillets in an oven-safe dish, top with the onion mixture, and broil until golden. Drain the potatoes, let them steam dry, toss them in the leftover butter with the remaining spring onions, and serve alongside the fish.
