Baked Chicory
The baked chicory from Spoonsparrow turns the ordinary salad into a hearty flavor experience.
Ingredients
- 4 chicories
- Salt
- 1 tbsp butter
- 1 tbsp wheat flour type 1050
- 130 ml milk (1.5% fat)
- 75 g Gouda cheese (1 piece)
- white pepper
- 4 sprigs Parsley
- 120 g cooked ham (4 slices)

Wash the chicory and cut the stem in a wedge shape. Blanch the chicory for 2–3 minutes in boiling salted water. Remove, shock with cold water, and drain well.

Heat butter in a pot, sprinkle flour, and sauté over high heat. Gradually pour in milk while stirring. Grate the cheese and add it to the sauce; melt over low heat and season with salt and white pepper. Wash parsley, shake dry, remove leaves, chop, and add to the sauce.

Wrap each chicory with a slice of ham and place them side by side in a baking dish. Pour the cheese sauce over them and bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 15 minutes. Serve baked chicory as a main course or side dish.
