Toscanian bean salad with tuna from Spoonsparrow tastes like a true vacation – delicious, fresh and filling.
Ingredients
- 500 g green beans (canned; drained weight)
- Salt
- 500 g tomatoes
- 300 g tuna in its own juice (canned; drained weight)
- 2 stems oregano
- 2 stems Parsley
- 1 onion
- 100 ml Vegetable broth
- 3 tbsp vinegar
- 2 tsp mustard
- Pepper
- 4 tbsp olive oil
- 2 Garlic cloves

Drain the beans, rinse them cold and let them drain. Wash the tomatoes, cut out the stem and quarter or eighth them. Drain the tuna and flake it with a fork. Peel the onion and slice it into thin rings.

Wash oregano and parsley, shake off excess water, pluck the leaves and finely chop them. Peel garlic and slice it. Combine with broth, vinegar, mustard, salt, pepper, and olive oil and whisk together.
