Fennel Salad with Chicken Breast

- 2 bulbs fennel
- 5 tomatoes
- 2 chicken breast fillets
- 1 untreated lemon (juice and zest)
- 0.5 orange (juice)
- olive oil
- 2 spring onions, sliced into thin rings
- Salt
- Pepper (freshly ground)

Season the chicken breast fillets with salt, lemon zest, and pepper. Drizzle with 4 tablespoons olive oil.

Clean the fennel (set aside the fronds) and slice into thin slivers. Wash the tomatoes and cut them into wedges.

Cook the chicken breast fillets in a grill pan over medium heat for about 4 minutes on each side. Remove from heat, let rest, then slice diagonally into strips.

Finely chop the fennel fronds. In a large bowl combine fennel, tomatoes, fronds, spring onions with salt, pepper, 4 tablespoons olive oil, orange and lemon juice; mix well. Let sit for 10 minutes. Taste, arrange salad on plates, top with chicken slices, and serve.
