Ingredients

  • 120 g arugula
  • 50 g chopped Italian herbs (mixed)
  • 1 Garlic clove
  • 0.5 shallot
  • 4 Tbsp breadcrumbs
  • 2 tbsp butter
  • Salt
  • Pepper
  • 4 small round Robiola cheeses (about 120-150 g each)
  • 2 tbsp olive oil
  • 4 tbsp white balsamic vinegar

Instructions

    Preheat the oven to 200°C.

    Wash and dry the arugula. Place the herbs in a bowl, press in the garlic clove, peel and finely chop the shallot, then mix with breadcrumbs and butter. Spread the mixture over the four cheeses and place on a baking sheet lined with parchment paper. Bake for about 15 minutes until the cheese begins to melt.

    Distribute the salad onto plates, drizzle with olive oil and balsamic vinegar, place the cheese on top, and serve immediately.
