Baked Cheese Noodles

Ingredients
- 500 g flour
- 250 g water
- 5 eggs
- 1 tsp salt
- 300 g sweet heavy cream
- 300 g grated Emmental cheese
- pepper (from grinder)
- nutmeg
- 4 tbsp roasted onion flakes

Add flour and salt to a bowl, stir with some water until smooth, knead in the eggs and gradually add the remaining water until a firm dough forms. Knead on high speed with a hand mixer until it bubbles.

In a large pot bring plenty of salted water to a boil and spoon a small amount of dough into a spaetzle cutter. Drop the spaetzles into the simmering water, let them cook once, then skim off and shock in cold water; drain.

Repeat this process until all the dough is used up.

Place the spaetzles in a baking dish. Preheat the oven to 200 °C.

Whisk the cream with the grated cheese in a bowl, seasoning with pepper and nutmeg.

Pour the cream‑cheese mixture over the spaetzles and bake in the middle of the oven for about 10 minutes until golden brown. Serve on plates sprinkled with a tablespoon of roasted onion flakes each. Pair with a fresh salad.
