Ingredients

  • soft butter (for greasing the dishes)
  • 1.2 kg cauliflower
  • Salt
  • 1 tbsp butter
  • 1 tbsp flour
  • 200 ml vegetable broth
  • 200 ml milk
  • nutmeg
  • 150 g grated cheese (e.g., Emmental)

Instructions

    Preheat the oven to 200°C fan.

    Grease four portion-sized casserole dishes. Rinse the cauliflower, cut into small florets and blanch in salted water for about 2 minutes. Shock in cold water, drain well and distribute among the dishes.

    In a pot, whisk the butter and flour together until foamy, then stir in the broth followed by the milk. Simmer gently for about 10 minutes until slightly thickened, stirring occasionally. Season with nutmeg and a pinch of salt. Pour over the cauliflower and sprinkle with cheese. Bake in the oven for about 20 minutes until golden brown.
