Ingredients

  • 8 portions salmon fillet (100 g each)
  • Juice of 1 lime
  • Salt
  • freshly ground pepper
  • 3 tbsp oil
  • 400 g vermicelli
  • Salt
  • 2 egg yolks
  • Grated zest of ½ lime
  • 100 g butter
  • 4 stems lemon balm
  • freshly ground pepper

Instructions

    Rinse salmon fillets, pat dry and drizzle with lime juice. Season with salt and pepper. Cook vermicelli according to package instructions in plenty of salted water until al dente.

    Beat egg yolks with lime zest and juice in a metal bowl. Place over a hot bain-marie and whisk vigorously. Gradually fold in butter pieces. Heat oil for the salmon fillets and sear each side for about 3 minutes.

    Rinse lemon balm, shake dry, pluck leaves from stems. Finely chop. Season Hollandaise with salt, pepper, and sugar; stir in lemon balm.

    Drain noodles, plate together with lime Hollandaise and pan-seared salmon.
