Baked Cauliflower

Ingredients
- 1.5 kg Cauliflower
- Salt
- 2 Garlic cloves
- 1 tbsp butter
- 1 tbsp Whole rye flour
- 150 ml Double Cream
- 200 ml vegetable broth
- Pepper
- nutmeg
- 200 g Gruyère Cheese

Clean the cauliflower, wash it, separate it into florets and cook it al dente in plenty of salted water for 10-15 minutes over medium heat.

Meanwhile, peel and chop the garlic. Melt the butter in a small saucepan and sauté the garlic in it over low heat for 1 minute. Add the flour, immediately whisking everything until no lumps remain.

Then add the cream and broth, stirring constantly. Bring to a boil over medium heat and let it thicken. Season with salt, pepper and freshly grated nutmeg and set the sauce aside. Grate the Gruyère cheese and set it aside as well.

Drain the cauliflower and fill a baking dish with it. Pour the cream sauce over it and sprinkle with grated cheese. Bake in a preheated oven at 220 °C (Fan 200 °C; Gas: Mark 3-4) for 5-10 minutes until golden brown. Serve the baked cauliflower hot afterwards.
