Vegetable Couscous with Cashews: a grainy, nutty vegetarian dish full of flavor and healthy ingredients - ready in just 15 minutes.
Ingredients
- 1 Spring onion
- 1 clove of garlic
- 2 tbsp olive oil
- 1 tsp ground cumin
- 300 g mixed vegetables (peas/carrots/corn; frozen)
- 300 ml Vegetable broth
- Salt
- Pepper
- 150 g couscous (instant)
- 1 tbsp cashews
- 2 tsp white wine vinegar
Instructions

Clean, wash, and thinly slice the spring onion. Peel and chop the garlic.

Heat the oil in a pot, briefly sauté the spring onion and garlic, and stir in the cumin.

Add the frozen vegetables and broth to the pot. Season with salt and pepper. Bring to a boil, then simmer for 4 minutes over low heat.

Stir the couscous into the vegetables, bring back to a boil, remove from heat, and let stand covered for 3 minutes.

In the meantime, roughly chop the cashews.

Fluff the vegetable couscous with a fork. Season with salt, pepper, and vinegar. Sprinkle with cashews and serve.
