Baked Butternut Squash with Goat Cheese

Ingredients

  • 1 butternut squash
  • 1 Red Onion
  • 2 Spring Onions
  • 1 Garlic clove
  • 2 tbsp olive oil
  • 3 tbsp Raisins
  • 60 ml white wine
  • Salt
  • Pepper (freshly ground)
  • ginger
  • 4 slices goat cheese roll

Instructions

    Halve the squash, remove seeds, scoop out flesh and cube. Trim and finely chop the onion, spring onions, and garlic; sauté in a pan with olive oil. Add the squash cubes and cook briefly.

    Add raisins, deglaze with wine, and let everything simmer for a few minutes.

    Preheat the oven to grill mode. Place the two squash halves into a baking dish.

    Season the sautéed mixture with salt, pepper, and ginger; fill the squash shells. Top with goat cheese slices and broil until the cheese melts and lightly browns. Serve immediately.
