Chickpea Patties

Chickpea patties with yogurt mint dip from Spoonsparrow are not only popular among veggies.

Ingredients

  • 500 g chickpeas (drained weight; canned)
  • 2 Spring Onions
  • 1 Garlic clove
  • 2 stalks Parsley
  • 2 stalks coriander
  • 1 tsp Baking powder
  • ground cumin
  • Salt
  • Cayenne pepper
  • 80 g breadcrumbs
  • 3 Tbsp plant oil
  • 400 g yogurt (3.5% fat)
  • a handful mint
  • 0.5 organic lime
  • Pepper

Instructions

    Drain chickpeas, rinse under cold water and let dry well. Wash and finely chop spring onions; peel and finely chop garlic. Wash herbs, shake off excess water, finely chop and blend with chickpeas into a fine puree. Mix in spring onions, garlic and baking powder. Season with cumin, salt and cayenne pepper. Knead breadcrumbs into the mixture until the dough is firm enough to shape. With damp hands form about 12 small balls and flatten slightly. Coat in remaining breadcrumbs. Fry in hot oil in batches for 5–6 minutes until golden brown. Drain on paper towels.

    Meanwhile, place yogurt in a bowl. Wash mint, shake dry, pluck leaves and finely chop. Rinse lime under hot water, dry, grate zest and squeeze juice. Mix lime juice and zest with mint into the yogurt. Season with salt and pepper.

    Serve chickpea patties with the dip on four plates, optionally sprinkled with coriander.
