Baked Broccoli Gratin

A perfect after-work recipe – quick, healthy and made with fresh ingredients.

Ingredients

  • 800 g broccoli florets
  • Salt
  • 3 tbsp butter
  • 3 tbsp Flour
  • 200 ml heavy cream (at least 30% fat)
  • 150 g freshly grated Gruyère cheese
  • black pepper (freshly ground)
  • nutmeg
  • butter (for greasing the dish)
  • 200 g breadcrumbs
  • 50 g melted butter

Instructions

    Preheat the oven to 200°C (400°F) with upper and lower heat. Wash the broccoli florets, blanch them in boiling salted water for 5 minutes, drain (reserve the broth), shock in cold water and let them dry well.

    In a saucepan melt the butter, sprinkle the flour over it, sauté briefly, then deglaze with 500 ml of the reserved broccoli broth. Whisk vigorously to avoid lumps, then stir in the cream and cheese. Season with salt, pepper and nutmeg, and simmer on low heat for 3 minutes.

    Distribute the broccoli into four greased, oven-safe oval baking dishes and pour the sauce over it. Mix the breadcrumbs with melted butter and sprinkle over the top. Bake in the preheated oven for about 20 minutes until golden brown. Remove and serve immediately.
