Baked Asparagus Wrapped in Prosciutto

Ingredients

  • 2 bunches of green asparagus
  • 16 slices of Parmaschinken (prosciutto)
  • 1 handful of arugula
  • 4 tbsp freshly grated Parmesan
  • 8 tbsp olive oil
  • 3 tbsp white wine vinegar
  • Salt
  • ground pepper

Instructions

    Preheat the oven to 200°C (400°F) on top heat.

    Peel the lower third of the asparagus and boil in salted water for about 10 minutes until just simmering. Drain, shock in ice water, and let dry. Wrap each asparagus spear with a slice of prosciutto and arrange side by side in a fireproof baking dish. Sprinkle with ground pepper. Mix Parmesan and 4 tbsp olive oil together and drizzle over the asparagus. Bake on the middle rack for 6-8 minutes until golden.

    Wash and trim the arugula, removing tough stems, and arrange on plates. Drizzle with remaining olive oil and vinegar. Season with salt and pepper, then place the baked asparagus on top. Serve immediately.
