Cauliflower Bowl
The Cauliflower Bowl from Spoonsparrow is quick to make and delivers plenty of vital nutrients.
Ingredients
- 300 g cauliflower
- 3 spring onions
- 4 tbsp olive oil
- Salt
- Pepper
- chili flakes
- 1 small romaine lettuce
- 0.5 small radicchio
- 100 g cherry tomatoes
- 0.5 cucumber
- 1 small garlic clove
- 1 tbsp Apple cider vinegar
- 1 tsp Honey
- 1 tsp Mustard
- 50 g Blueberries
- 100 g feta (45% fat in total)
- 2 tbsp mixed nuts (e.g., cashews, almonds, walnuts; 15 g each)
Instructions

Clean and wash the cauliflower, then cut into florets. Pulse in a food processor until rice-sized. Trim and slice two spring onions into rings; mince the rest.

Heat 1 tbsp olive oil in a skillet over medium heat and sauté the cauliflower with the onion rings for 3 minutes. Season with salt, pepper, and chili flakes.

Wash and dry the lettuces, then cut into strips. Clean and halve the tomatoes, dice the cucumber.

For the dressing, peel the garlic, press it into a bowl, then whisk in the remaining oil, vinegar, honey, mustard, and onion rings.

Pat the blueberries dry, then arrange the lettuce, radicchio, tomatoes, cucumber, cauliflower rice, and berries on bowls. Sprinkle with feta, top with nuts, and drizzle the dressing over the Cauliflower Bowl.
