Low-Carb Zucchini Pizza

Ingredients

  • 300 g large zucchini (1 large zucchini)
  • Salt
  • 50 g Parmesan cheese (1 piece)
  • 1 egg
  • 125 g shredded mozzarella
  • 1 Garlic clove
  • 5 tbsp tomato sauce
  • Pepper
  • chili flakes
  • 10 g basil (0.5 bunch)

Instructions

    Place a kitchen towel over a colander. Wash and grate the zucchini, then put it in the colander. Sprinkle salt on the zucchini and let it sit for about ten minutes. Afterward, squeeze the towel firmly to remove excess moisture.

    Grate the Parmesan finely. Mix the zucchini mixture with the grated Parmesan, egg, and 50 g of mozzarella until a dough forms.

    Line a baking sheet with parchment paper. Spread the zucchini dough onto the sheet and press into a round shape; the base should be relatively thin. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 20 minutes.

    Peel and finely dice the garlic. Combine the tomato sauce with the garlic, salt, pepper, and chili flakes. After 20 minutes, flip the pizza base and spread the seasoned tomato sauce over it. Distribute the remaining mozzarella on top of the pizza. Bake for an additional 15 minutes.

    Wash and dry the basil leaves, then garnish the pizza with them.
