Baked Asparagus Rolls

Spoonsparrow baked asparagus rolls are always delicious!

Ingredients

  • 500 g white asparagus
  • 500 g Green Asparagus
  • Salt
  • 160 g cooked ham (8 slices)
  • 125 g mozzarella (9% fat; 1 ball)
  • 10 g butter (2 tsp)
  • 50 g sliced almonds (5 tbsp)
  • Pepper

Instructions

    Trim the lower third of the green asparagus and cut off woody ends. Leave white asparagus whole.

    Cook white asparagus in boiling salted water for about 10 minutes, then add green asparagus and cook together another 10 minutes.

    Meanwhile halve ham slices and slice mozzarella. Grease four oven-safe ramekins with butter.

    Remove asparagus from water, shock in cold water, drain.

  5. 5.

    Cut asparagus sticks in half; wrap three white and three green sticks with two halved ham slices to form a parcel. Place two rolls in each ramekin.

    Top each asparagus parcel with one slice of mozzarella, sprinkle sliced almonds, and season generously with pepper.

    Broil the rolls under a preheated oven grill until the cheese melts.
