Asparagus Potato Gratin with Shrimp

Ingredients
- 800 g asparagus
- 1 kg potatoes
- 160 g North Sea shrimp
- 2 Eggs
- 400 ml low-fat milk
- Salt
- Pepper (freshly ground)
- 6 tbsp grated Gouda cheese
- parsley (for garnish)
- 1 tbsp butter (for the dish)

Preheat the oven to 200°C (top/bottom heat).

Wash, peel thoroughly and cut the asparagus into pieces. Cook in plenty of salted water for 10-15 minutes until al dente, then drain and let cool. Brush the potatoes under running water, scrub clean, and cook in plenty of salted water for about 20 minutes until almost tender.

Drain the potatoes, let them dry slightly, then slice them. Layer potato slices with asparagus and shrimp in a lightly buttered baking dish.

Whisk together the eggs, milk, salt, and pepper; pour over the layers and sprinkle with cheese. Bake on the middle rack for approximately 30 minutes. Serve garnished with parsley.
