Ingredients

  • 500 g Green Asparagus
  • Salt
  • 400 g farfalle
  • 150 g pecorino (or parmesan)
  • 1 cup (250 g) crème fraîche
  • 1 tbsp thyme leaves
  • ground pepper
  • butter (for the dish)

Instructions

    Rinse the asparagus and trim the ends. Boil in salted water for 8-10 minutes. Drain and set aside.

    Cook farfalle in plenty of salted water according to package instructions until al dente. Grate the pecorino. Mix crème fraîche with two-thirds of the pecorino and thyme, season with pepper. Drain the pasta and stir in the crème mixture.

    Grease a baking dish. Combine the asparagus with the pasta and transfer to the dish. Sprinkle with the remaining pecorino. Bake in a preheated oven at 220°C (gas: level 4-5, fan: 200°C) for about 15-20 minutes until golden.
