Baked Asparagus Omelette Cake

Ingredients

  • butter (for the pan)
  • 150 g green asparagus
  • 1 handful chives
  • 6 Eggs
  • 70 g crème fraîche
  • 3 tbsp Flour
  • Salt
  • Pepper (freshly ground)
  • Nutmeg (freshly grated)

Instructions

    Preheat the oven to 175°C fan-forced. Grease the cake tin.

    Wash the asparagus, trim the tough ends and split the stalks lengthwise into quarters. Cut into about 4 cm pieces.

    Rinse the chives, shake dry and cut into small rings. Set aside some for garnish.

    Whisk the eggs with crème fraîche, flour, salt, pepper and nutmeg. Fold in the chives and pour into the tin. Arrange the asparagus on top and bake in the oven for about 30 minutes.
