Gratinated Asparagus with Chocolate Cream

Ingredients
- 4 stalks asparagus
- 3 tbsp powdered sugar
- 1 tbsp Lemon Juice
- 4 egg yolks
- 150 ml white wine
- 0.5 tsp ground cinnamon
- 150 g dark couverture chocolate
- 400 g crème fraîche
- 400 g Strawberries
- 2 stalks asparagus
Instructions

Peel the asparagus, trim the ends and cut diagonally into very thin slices; marinate with 1 tbsp powdered sugar and lemon juice and spread on four oven-safe plates.

Place egg yolks, wine, cinnamon and remaining powdered sugar in a metal bowl and whisk over a hot water bath for about 3 minutes until creamy.

Spread the frothy mixture over the asparagus. Bake in a preheated oven at 250°C for about 5 minutes until the surface turns golden.

Warm crème fraîche while stirring, add chopped couverture chocolate and stir until melted; pour the chocolate cream into glasses and refrigerate for 2 hours.

Wash, clean, and halve or quarter strawberries according to size. Peel asparagus, trim ends and slice very thinly with a vegetable peeler.

Arrange strawberries and asparagus strips decoratively over the chocolate cream and serve immediately.
