Ingredients

  • 12 asparagus spears
  • Salt
  • 1 tsp sugar
  • 2 egg whites
  • white pepper (ground)
  • butter (for the tins)
  • Cress (for garnish)

Instructions

    Preheat the oven to 180°C fan. Butter four small tart pans.

    Peel the lower third of the asparagus and cut the spears in half. Boil in salted water with sugar for about 10 minutes, not fully cooked.

    Beat the egg whites with a pinch of salt and pepper until stiff peaks form. Fill each pan with 4 tbsp of meringue and bake for about 10 minutes. Top with the drained asparagus. Add the remaining meringue to the center and bake for another 10 minutes. Remove from oven, let cool, and serve garnished with cress.
