Baked Apples with Yogurt Sauce
The baked apples with yogurt sauce from Spoonsparrow are the healthy version of the Christmas classic.
Ingredients
- 30 g Raisins (2 tbsp)
- 80 ml apple juice
- 4 apples
- 1 tbsp Lemon Juice
- 1 vanilla pod
- 30 g chopped almonds (2 tbsp)
- 30 g almond butter (2 Tbsp)
- 45 g agave syrup (3 tbsp)
- 30 g rolled oats (2 tbsp)
- a pinch cinnamon
- 200 g yogurt (3.5% fat)
- 1 tsp turmeric powder

Soak raisins in apple juice for 10 minutes. Meanwhile wash apples, remove cores with an apple corer, cut a small notch above the core on each apple and drizzle with lemon juice.

Split vanilla pod lengthwise and scrape out the seeds with a knife. Drain raisins, reserve the liquid and pour it into a baking dish.

Mix raisins, almonds, almond butter, 2 tbsp agave syrup and rolled oats. Season with cinnamon and half of the vanilla seeds. Fill apples with this mixture and place them in the dish. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for 20 minutes.

Meanwhile mix yogurt with remaining vanilla seeds and turmeric, sweeten with the remaining agave syrup. Remove baked apples from the oven and serve with the sauce.
