Baked Apple Dessert with Speculoos

Ingredients
- 1 tsp Cornstarch
- 150 ml apple juice
- 2 tbsp honey
- 2 Apples
- 1 tsp ground cardamom
- 0.5 organic lemon (juice and zest)
- 150 g Yogurt (3.5% fat)
- 100 g speculoos

Whisk the cornstarch with 2 tbsp apple juice and 1 tsp honey.

Wash the apples, peel if desired, quarter them, remove the core, and dice into small cubes. Cook the apple cubes with the remaining apple juice, 1 tbsp honey, cardamom, lemon juice, and zest over medium heat until they are still slightly firm, about 3-4 minutes. Gradually stir in the whisked cornstarch, mixing well until the liquid thickens slightly. Remove from heat and let cool.

Whisk the yogurt with the remaining honey until creamy. Crush the speculoos into fine crumbs.

Fill half of the apple compote into four glasses. Top with half of the yogurt and sprinkle with some cookie crumbs. Add the remaining ingredients in the same way and top with the rest of the crumbs. Let the baked apple dessert chill in the refrigerator for at least 20 minutes before serving.
