Baiser mit Nuss
A hazelnut meringue treat made with fresh ingredients from the pastry category. Try this and other recipes from Spoonsparrow!
Ingredients
- 75 g hazelnuts (peeled)
- 3 egg whites
- 1 tsp lemon juice
- 1 vanilla bean (pulp)
- 150 g powdered sugar
- 75 g hazelnut flakes
- 150 g dark chocolate

Preheat the oven to 150°C fan.

Finely grind the hazelnuts in a food processor. Beat the egg whites with lemon juice and vanilla pulp until stiff peaks form. Gradually add the sugar, continuing to beat until the mixture glows and holds peaks. Fold in the ground nuts, then fill a piping bag fitted with a smooth tip with the batter.

Place small dots (about 2 cm apart) on a parchment-lined baking sheet. Sprinkle hazelnut flakes over them. Bake in the preheated oven for about 25 minutes.

Remove and let cool on the tray.

Melt the chocolate over a double boiler, then allow it to cool slightly. Dip the tips of the meringue dots into the chocolate and set them on parchment paper to dry.
