Ingredients

  • 1 kg pears
  • 500 g fruit sugar (2:1)
  • 1 vanilla pod
  • 1 Orange (juice)
  • 40 g walnut kernels

    Peel the pears, remove the core, and dice them into small cubes. In a large pot combine the pear pieces with the sugar and split vanilla pod. Stir in the orange juice and let steep covered for at least 1 hour. Roughly chop the walnuts.

    Bring the pear mixture to a boil while stirring continuously; simmer vigorously for about 4 minutes. Perform a gel test, remove from heat, discard the vanilla pod, and puree the jam finely. Add the walnuts and, if desired, chopped vanilla pieces back in. Immediately pour the hot jam into clean jars, seal tightly, and let sit upside down for about 10 minutes to cool. Flip the jars and rotate them while cooling so the nuts distribute evenly.
