Ingredients
- 4 baguette buns
- 16 cocktail tomatoes
- 1 tbsp sugar
- 6 tbsp Olive oil
- 2 tbsp freshly chopped oregano
- Salt
- Pepper (freshly ground)
- 1 bunch rocket (about 40 g)
- 4 tbsp coarsely grated parmesan

Wash, trim, and pat the tomatoes dry. Thread four cocktail tomatoes onto each wooden skewer. In a small saucepan, melt sugar with olive oil, stir in oregano, season with salt and pepper, and let cool slightly. Wash and rinse the rocket, then drain well.

Brush the tomato skewers with some of the herb oil and grill them under a hot oven broiler for about 2 minutes on each side until the tomatoes are heated through and the skins have blistered.

For serving, slice the baguette buns lengthwise, slightly open them, and lay rocket inside. Place one tomato skewer in each bun, sprinkle with parmesan, and drizzle with remaining herb oil.
