Chicken Ratatouille with Gnocchi from Spoonsparrow: Fitness Food with Italian flair!

Ingredients

  • 1 Red Onion
  • 2 cloves garlic
  • 300 g chicken breast fillet
  • 1 yellow bell pepper
  • 1 eggplant
  • 1 Zucchini
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 300 g gnocchi (ready-made, refrigerated section)
  • 2 sprigs thyme
  • 2 sprigs Rosemary
  • 2 tbsp Tomato paste
  • 400 g chopped tomatoes (canned)
  • Salt
  • Pepper

Instructions

  1. 1.

    Peel and finely chop the onion and garlic. Wash the chicken breast fillet, pat it dry, and cut it into small pieces. Wash the bell pepper, eggplant, and zucchini and cut them into bite-sized pieces.

    Heat olive oil in a pan. Add the onion and chicken and brown vigorously for 3 minutes. Add the garlic, bell pepper, eggplant, and zucchini and brown everything over medium heat for 6–7 minutes.

    Meanwhile, heat butter in another pan. Add the gnocchi and brown it with occasional turning over medium heat.

    Wash the herbs, shake them dry, and finely chop the leaves. Add the herbs, tomato paste, and chopped tomatoes to the chicken ratatouille and simmer open for another 5 minutes.

    Season the chicken ratatouille with salt and pepper and serve with the gnocchi.
